Oven Fried Drumsticks from threelops

4 tbsp (1/2 stick) butter
1 cup coating of choice:
-dry bread crumbs (homemade because they are coarser); -fine cracker crumbs; -crushed unsweetened flake cereal; or
-3/4 cup dry bread crumbs mixed with 1/4 cup grated Parmesan cheese
8 chicken drumsticks (about 2 pounds), skinned if desired, defrosted if completely frozen
Salt and black pepper to taste
1.) Preheat the oven to 375*. Spray a 9X13 baking dish with cooking oil spray and set aside.
2.) Place the butter in a shallow dish and melt in the microwave.
3.) Prepare coating of choice a place it in a small shallow bowl.
4.) Rinse the drumsticks and pat them dry with paper towels. Roll the drumsticks one at a time in the melted butter and then in the coating. Place them in the baking dish. Liberally season with salt and pepper.
5.) Bake, uncovered, until the meat is extremely tender and the coating is golden brown (about 1 hour).
