Cindy’s Pumpkin Chip Cookies
1 ½ c. softened butter
2 cups backed brown sugar
1 cup sugar
1 (15 oz) can pumpkin (solid pack)
1 tsp. vanilla
4 cups flour
2 cups quick cook oatmeal
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
2 cups (12 oz) chocolate chips [Andrea: 6 oz regular, 8 oz mini]
In large mixing bowl, cream butter and sugars. Beat in pumpkin, egg and vanilla.
Combine flour, oats, baking soda, cinnamon and salt. Gradually add to creamed mixture. Stir in choc. Chips. Drop by tablespoons two inches apart onto uncreased baking sheets.
Bake at 350 for 10-12 minutes or til lightly browned. Makes 10 dozen.
These stay soft…don’t overcook!
