Oatmeal Peanut Butter Cookies, posted by ChurchPat of the Manor

I use organic brown sugar when I can get it and organic peanut butter. I also use organic, white/whole wheat flour (montana soft white wheat) which I purchase at a local Mennonite Store along with organically grown oats.

For special occasions I mix chocolate chips into the batter.

1 cup butter
2 cups brown sugar
3 eggs
2 teaspoons vanilla
2 cups peanut butter
2 cups flour
2 cups old-fashioned oats
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt

Preheat oven to 350 degrees F.
Cream butter and brown sugar. Add eggs, vanilla and peanut butter. Add dry ingredents. Roll by tablespoon-full into balls.

Bake for 10 to 12 minutes or until golden brown
