Kamut ‘n’ Pumkin Muffins

1 egg — separated
1/2 cup pumpkin puree
1/2 cup maple syrup
1/2 cup milk
1/4 cup olive oil
1 3/4 cups Kamut flour
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg

Preheat oven to 400 degrees. Separate egg and place white in a small mixing bowl; beat until stiff and set aside. Place yolk, pumpkin, maple syrup, milk and oil in a large mixing bowl and stir until well combined. In a separate bowl, sift together flour, baking powder, salt, cinnamon and nutmeg with a fork. Add dry ingredients to wet and stir just until moistened. Fold in beaten egg white. Fill prepared muffin cups 3/4 full and bake for 15-20 minutes or until tops are golden and center tests clean.
