We use a lot of flax meal, and the rule of thumb is to sub the fat 1:3, however in this recipe, which origionally called for 1/2 c oil, I use 1/4 c oil and 3/4 c flax meal – just really nice texture. Enjoy!

Pumpkin Muffins
1 c a/p flour
3/4 c whole wheat flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
2 eggs, lightly beaten
1/2 c oil (or 1/4 c oil, 3/4 c flax meal)
1/2 c honey
1/3 c water
1 can pumpkin
1/2 c chopped walnuts
1 c mini choc chips, cranberries, chopped apples…whatever you want to add)

Combine first 7 ingredients in lg bowl **(if using flax meal, add that to dry ingredients!). Combine eggs, pumpkin, oil, honey and water, mix well. Stir into dry ingr. til just combined, fold in walnuts and last ingr. Fill lined cups (or sprayed) 3/4 full (or so) and bake at 350 for 20-25 min. Makes 15 regular size (or 12 reg plus about 16 little ones)
