Whole Wheat Apple Muffins ~ posted by mom2abcd

1 cup whole wheat pastry flour
1 cup rolled oats
1/2 tsp. sea salt
3 tsp. baking powder (aluminum free)
1/4 tsp. nutmeg
3 tsp. cinnamon
1/4 – 1/3 cup sucanat
1 egg
3/4 cup milk
1/3 cup applesauce
1 medium baking apple, peeled, cored and coarsely chopped
1/2 cup raisins
1/2 cup chopped nuts (walnuts, pecans – optional) Preheat Oven to 350 degrees. Grease a muffin cups lightly with oil or line with muffin papers. Mix first seven ingredients well. In a separate bowl, lightly beat the eggs. Stir in the applesauce and milk. Mix into dry ingredients just until moistened. Fold in apples, raisins and nuts. Fill muffin cups to top (these are not a high rising muffin). Bake for 15-17 minutes, or until muffins test done. These freeze well for storing ahead and are nice to grab out one each day for my husband’s lunch. They are a healthy low fat alternative to other mid morning snacks and muffins!
